The salt make the environment hypertonic for the plants. More water diffuses out of the root cells than the amount diffusing into the cells.

Salt is a negative ion, thus containing a surplus of electrons. When water becomes snow/ice, it gives off energy and electrons. The salt gives electrons back to ice, increasing its temperature and melting it. However, salt also dries up moisture, which can in effect dry up water in the root systems of plants, effectively killing them. Thus, keep large quantities of salt from plants, the melting snow water will actually benefit them!

Think of it when you ride a bicycle would you prefer to ride your bicycle on the grass, dirt and rocks or in the paved roads? well I'm hoping you said paved roads because in the paved roads you would use less energy.
