The Georgia speeding ticket is still valid. It is not required that you sign the ticket. If it is for less that 14 mph over the limit it is a no points ticket and most people just pay. Yes, it is very possible a person can go to jail for driving on a suspended license. It will be up to the police officer.
Probably nothing, but is the chance to be 'witty' worth the risk? Do you really want to know how long the officer can take doing a roadside vehicle inspection on your car, or how many violations he can find if you convince him to look real hard? I would advise against sharing your wit with the officer.

In the US insurance has nothing to do with speeding. If your state has mandatory insurance, the fact that your car is insured is good enough but the officer may want to see proof of insurance. Here it is the vehicle that is insured, not the driver. In UK you should not let anyone drive your car on the public road without checking they are insured. You can be fined if you let them drive without insurance.
