To avoid fraud. Senders could otherwise claim they posted mail earlier or later than they did. An incorrect date forces the US Postal Service to reprocess the mail with the correct date and that drives up their costs (and eventually postage). As a result postal workers are directed not to accept incorrect metered dates. What's more it is easy for a sender to correct a wrong date: Simply re-meter the letter with $0.00 postage but the correct date and the postal service will accept it.
