If it's very fresh, it can last up to a week. After about 4 days, it will begin to lose its crunch but is still edible. You can chop/cook with it for three or four days after that. The best solution, if it's almost a week or it's not looking so good, is to crisp it by cutting into pieces and storing them in water in the fridge. Within about 30 minutes the crunch is back. Celery doesn't freeze well (it gets mealy when defrosted), so don't go that route.
