Chain food stores took off in 1859. They were small stores and focused only on one aspect. They sold "dry goods" and meats, fruit, vegatables were sold by others. The first full self service store was in 1916 with Piggy Wiggly stores, but it wasn't until the 1920's that chain food stores became dominate. In the 1930's and 40's the supermarket was created in southern CA. By the 1950's with the urbanization of America the full transition to supermarkets that we know was made.
