The chinese had a sauce called ket-siap, which was a pickled fish sauce, this was brought west and the first reference in western print was around 1690. Tomatoes were added to this watery sauce sometime in the 18th century and marketing may have begun by F & J Heinz Co. in 1876. Several recipes exist predating Heinz' marketing of tomato ketchup, made from various spices and fruits.

In the 17th century, in China. It was called "ke-chiap" and consisted at the time of mostly brine of pickled fish. After the English adopted it and brought it back to the English tables, It developed into a dark, largely mushroom-based sauce.

The earliest tomato ketchup recipe dates from 1817. Ready-made, bottled tomato ketchup was first marketed by Jonas Yerkes in the USA, around 1830. The still familiar Heinz ketchup came on the market in 1876.
