I wanted to find that out. 45 minutes ago, I drank 300ml of salted uncooked pig blood and I am feeling ok. It didn't taste awful. It contained a lot of salt though and there is a minor complaint by my digestion. Also I ate about 1200% RDA of vitamin C simultaneously.

Obviously, if the animal was sick you could get sick with that disease too, pretty much just common sense.
