Cornmeal is a very active starch that turns in to sugars rapidly. It is considered to be a fast carbohydrate. If you are diabetic it can be used as a emergency dose to get your low blood sugars up fairly rapidly. The most preferred is Orange Juice or glucose tablets.

If you are using it as part of a normal meal and trying to control blood sugar spikes, it is suggested that you use very little of it, and eat it with vegetables first that are slow carbohydrates to offset the sugar- glucose spike it causes. The vegetables dilute the rapid acting carbohydrates.

For instance, 10 corn chips is approximately 10 rapid acting carbohydrates.
