I am assuming the egg was boiled. If the egg was boiled and peeled and a dark or grey coating was apparent surrounding the yolk, yes it is safe to eat. The discolouration is from iron and sulfur reacting to heat.

Yoke is the correct spelling if you are referring to the yoke that is put on farm animals. If you mean in an egg, it is yolk.

Normally if you have 3 eggs you will have a yolk (it's the yellow part of the egg). However if you threw that part out and have no more or cannot get more then theres not much you can do other than try the recipe without the yolk
