Not true, basically impossible. It is believable if some of the hair turned white, but a whole head of hair is not likely. Several writers clearly state, that in fact her hair had lost its color long before. (One claims it turned suddenly white following her failed attempt to flee France in 1791.)

The closest thing to an overnight graying of the hair is due to a condition called "Diffuse Alopecia Areata," which could occur with people with mixed white and colored hair. For some reason it targets pigmented hair, causing it to fall out, leading to the illusion that the hair had turned white. Even this takes a few days.
