The muscularis layer of the stomach has a unique structure compared to the rest of the alimentary canal, as it consists of three distinct layers of smooth muscle: an inner oblique layer, a middle circular layer, and an outer longitudinal layer. This three-layered arrangement allows for more complex and powerful contractions, facilitating the churning and mixing of food with gastric juices. In contrast, the muscularis layer in other parts of the alimentary canal typically consists of only two layers (circular and longitudinal), which are primarily responsible for peristalsis and the movement of food along the digestive tract.

There are several differences between a bird's and an insect's alimentary canals. A bird's begins with the beak while an insect's doesn't. A bird's alimentary canal has a tongue, pancreas and duodenum, while an insect's doesn't.
The stomach lining contains three types of glands. The pyloric glands, the cardiac gastric glands, secrete mucus that covers the stomach lining and protects it from being digested. The intermediate gastric glands secrete gastric juices that has a pH of 1.5 to 2.5. this pH is do to its high concentration of hydrochloric acid, which kills most bacteria that are swallowed in food. Gastric juices also contains digestive enzyme pepsin. Pepsin is secreted in an inactive form called pepsinogen, which is activated after it is mixed with the hydrochloricacid. Pepsin breaks down large protein molecules into shorter chains of amino acids called polypeptides.
The three major pairs of salivary glands in the mouth area are the parotid glands, submandibular glands, and sublingual glands. They secrete saliva into the mouth to aid in digestion and lubrication of food.
