Rose doesn't go blind. Rather, she is completely trapped in a mental state that is not of herself. You understand that at one point she was a prostitute and the blind man used to be her pimp. (chance "Your Father wants you to come home" to "Your 'Daddy' wants you to come home. Rose's husband is trying to protect her from her past by locking her away in this room and altering her mental state so her memories of the past will be skewed. When Rose's "Daddy" returns, he tries to convince her to return to her old ways and to reclaim her mental state. When the husband returns, he kills the blind man because he's trying to protect her from her past. When the blind man is killed, Rose has no sense of who she really is, hence, she "can't see".
