epidermis
The outer layer of the epidermis is full of scale like that frequently flake off. These cells are pushed to the surface as they begin to die.
The structure in the epidermis that gaseous exchange occurs in plants is through the stomata. A stomata is a tiny opening or pore in the epidermis.
epidermal ridge
The skin system has both dermis and epidermis layers. The epidermis is the outermost layer of skin and provides protection, while the dermis is underneath and contains blood vessels, nerves, and structures such as hair follicles and sweat glands.
There is no structural similarity between the epidermis and the dermis. They are both a part of the integumentary system but are vastly different in structure and makeup.

Removing the lower epidermis layer allows for easier observation of stomata and overall leaf structure. Stomata are mostly located on the lower epidermis, which regulates gas exchange for photosynthesis. Additionally, removing the upper epidermis may damage the leaf's cuticle, which can affect its ability to retain water.
Any modification in the chemical structure of foods is a chemical change.
