It depends on how you define "easiest": do you mean the least likely to cause an upset stomach? Least likely to cause diarrhea? Easiest/fastest food to absorb? To metabolize? Etc.

Many of those criteria would probably be satisfied by what are called elemental diets. Whereas most diets contain complex proteins, carbohydrates, and fats, elemental diets contain the simplest building blocks of these foods: amino acids, simple sugars, and simple fatty acids.

Some physicians swear by the BRAT diet (bananas, rice, apple sauce, and toast) to be gentle on the stomach, but I haven't seen any evidence for this.
