The mandibular branch (V3) of the trigeminal nerve (CN V) runs down through the mandibular foramen to all the lower teeth. They need to be able to find that spot to properly numb the teeth of the mandible.

Dentists can usually handle their temper with no problem. It is something you learn when practicing or in dentist school. Usually dentist just take a deep breath or say something to keep their temper low. This is everything I know.
