I am going to take that question to mean "what was a peasant's roof made of in medieval times?"
The most common, and least expensive way, to construct a roof was using a material called thatch. A thatch roof is made of thick mats of dried vegetation such as grass, reeds, sedge, etc. When properly constructed it is water and wind proof, and also an excellent insulator, helping to keep houses cool in summer and warm in winter.
The serfs were tied to the land they lived on and farmed.
Medieval SerfsA medieval village or manor usually contained several classes of laborers, consisting of Medieval Serfs and peasants. There might be a number of freemen, who paid a fixed rent, either in money or produce, for the use of their land. Then there were Medieval Serfs who laboured in the lord's household or at work on his domain. Most of the peasants were Medieval Serfs or villeins. The other labourers were called Cottagers or small holders. Under feudalism the lords and nobles of the land had certain rights over Medieval Serfs and Peasants which included the right of jurisdiction, which gave judicial power to the nobles and lords and the right of hunting
Kings & Queens were the Highest-ranking class in the Medieval Times. They weren't as rich as Nobles (sadly to say...) but they controled ALL the power over the land and lived in castles with serfs and servants.

the medieval baker was a freeman. They were aloud to set up bakeries for serfs and they were aloud to move from house to house working for the lords.
They were called serfs. Since they were not slaves, it is not precise to say they were owned by the lord.
Serf is another word for slave so they were owned by the nobility.
