the answer to this is simple...
they took unpurified clay (they didn't have the proper tech to purify the clay) shaped it to make what they wanted the pottery to be then put it in a chamber that was heated just enough to harden the pottery (if the pottery was kept in the chamber to long the pottery hardened to much and started to crack
