In 1200 AD they did not throw spears at a castle. First of all they would surround the castle hoping to get the occupants to surrender after a while because of lack of food and/or drinking water. When this did not lead to surrender, the attackers might storm the walls by climbing ladders set against them. If that didn't work they would try to undermine a part of the wall and storm through the gap once the wall collapsed. If mining wasn't an option, they could bring on a battering ram (well covered against attacks from above) and try to beat down the gates, or bring on siege enginges like catapults; or build movable towers as high as the wall itself, pull them to the wall and attack from there.
