a knight would raise his sword hand (the right hand) and show to any approaching noblemen that he did not have a weapon in his hand and that his intentions were not hostile.

it is possible that handshake also had similar meaning, to shake the right hand of the other person to make sure that he didn't have concealed weapons in the right hand.
