Slaves were not allowed to learn to read and write. Education was forbidden, so they could improve their position in society. Often, they were watched in the fields by an overseer.

When slaves initially landed in America, they were separated from their families and paired up with other slaves who did not speak their same language. This way the slaves could not coordinate an escape in secret by speaking other languages.

Later on, slaves were allowed to have families, but they would speak to each other in English. Sometimes (though rarely) house-slaves were taught how to read by their masters, but this was illegal for both master and slave.
