Most of the time, none. Despite what you see in the movies, most moats were "dry" moats, basically a deep, steep sided ditch. On occasion if a ready water source was available one would be flooded to make a "wet" moat, but this was uncommon. The purpose of the moat was to make tunneling or mining under the fortress walls more difficult.

On the occasion that a wet moat was available, it was sometimes used for farming fish. In England fish such as bream and pike were often farmed in ponds by the aristocracy. The medieval Catholic Church forbid the eating of meat three days per week, and among the classes that could afford to frequently eat meat there was a desire to have fish available as a substitute.
