I'm not certain that anyone actually know where the breed originates. They're called Irish because arguably the breeds greatest accomplishment, and what almost destroyed it, was in Ireland. About 9000 years ago, there used to be a species called the Irish Wolf. As of the mid-nineteenth century, it was completely extinct thanks to the Wolfhound. This is in many ways a great injustice, but it isn't the Wolfhound's fault. After that they fell into disfavor because they became status symbols for the wealthy. The modern wolfhound was reconstructed and isn't quite like its ancient forebears.

So, in essence, I don't think there is a completely satisfactory answer for this one. If there is, I'd like to know myself.
