This question is very broad, but I'll try to answer it as concise and informational as I can without blabbering on. In terms of language, the Maya spoke (and still speak) around 30 dialects, some being k'iche', mam, kaqchikel, and tzuztihil. For general purposes, the Maya devised an advanced system of writing, which was understood until the spanish came and Landa burned their entire libraries down, containing thousands of books. Only four survive.

In terms of astronomy, the Maya used tall observatories reaching hundreds of feet into the air. The largest one was thought to be, until now, four hundred feet tall. The tallest one to date is now around six hundred feet tall. These observatories, which many people think are religious things, (They're not, the Maya weren't religious) are built specifically so that the Maya could chart the movements of certain stars from certain observatories at certain times of the year.

The Maya used also, for mathematics, a vigesimal number system, or a number system based on the number twenty. One was a dot, five was a bar, zero was a shell, and twenty was a dot above a shell, these were spaced apart.
