I believe clay tablets with what is called "cuneiform" symbols have been found in ancient Sumeria (what is now the Iraq and Iran area) that are 5 or 6 thousand years old. There may also be other archeological findings from other parts of the world, but Sumerian cuneiform is well known. Clay was used because they didn't have a Staples nearby to go get paper at. Plus, when wet, it was easy to scratch symbols onto, and then when it dried, it was more permanent.

Clay is not considered a soft rock. It is a type of sedimentary material that is formed from the weathering and erosion of rocks. Clay has a fine particle size and exhibits plasticity when wet, making it an important material in ceramics and construction.
Cuneiform was a form of writing developed by the Phoenician. They used a stencil to carve the letters into clay tablets ans then baked the tablets when they wanted to make the writing permanent.

Sumerians in Mesopotamia were the first people known to write their language by pressing symbols into wet clay using a pointed stick. This writing system is called cuneiform and dates back to around 3200 BCE.
