The English, who had no use for the Irish, spread the potato blight germs around on the potato fields so that they could get rid of as many Irish as possible. It largely worked - millions of Irish either starved to death or immigrated to other nations, like Canada and the USA. (That's why my greatgreatgreatgreatgreat grandfather came to America)
In the times when immigration was heavy, America was a blossoming country, and was said to be the best place to live. It was thought that America had land and jobs to share and that is why America was a popular place to immigrate to. In the case of why the Irish specifically came, it was most probably the Potato Famine. The Potato Famine left thousands of Irish starving, and without any income. Raising the potatoes was the livelihood of most Irish and when the rot struck, they had no way to pay landlords or pay for food. They were forced to leave in hopes of a better life somewhere else, and since America seemed to be so rich in opportunities, most chose to go there.

Over a million Irish starved to death, and a huge immigration to the USA by over a million Irish followed, looking for another place to start over, and work to earn money to eat, as simplistic as that sounds.

People relied on the potato for their main food source. when the potato was effected in those years, everyone starved, over 2 million people died that 25% of the people!

because the south island is a lot like the high lands in Scotland plus there was a lot of land to farm

When the famine began in 1845, many people began to emigrate from Ireland, many of those going to America. There would have been some emigration to America before that, but the famine increased the numbers going.
