Different women had different responsibilities, and they were as various in those days as they are today. During the course of her life, a woman's responsibilities also changed quite a lot.

For example, we might take the example of a woman who was a serf, as most were in many places. Such a woman started life helping her parents with their work. In time, she wanted to establish her own family, but before she could, she had to collect a dowry, which she might have done by spinning thread, making her a spinster. At about the age of twenty five or so, she might have saved enough to attract the interest of a young man with a future, and so they would marry. This changed her responsibilities to helping him with work. Having children changed things again. And on it went.

There is a link below to a related question, whose third answer deals with the things women did in more detail, showing the broad variety of things they undertook.
