This recipe makes a delicious soup:Hearty Hot Minestrone SoupIngredients:2 tablespoons oil1 large onion, diced2 teaspoons garlic powder2 stalks celery, diced1 large carrot, diced1 can green beans1 teaspoon dried oregano1 teaspoon dried basilSalt and pepper to taste1 can diced tomatoes1 can crushed tomatoes6 cups chicken broth1 can kidney beans, drained and rinsed1 cup uncooked elbow pastaParmesan cheeseProcedure:Heat oil in a large soup pot over medium-high heat.Add onion and cook until translucent.Add celery and carrot and cook until they just begin to get soft.Add green beans, oregano, basil, garlic powder and salt and pepper to taste.Simmer 5 minutes.Add diced and crushed tomatoes and the chicken broth.Bring to a boil.Reduce heat to medium low and simmer 10 minutes, stirring occasionally.Add kidney beans and pasta; stir in well.Cook until pasta and vegetables are tender.Serve with parmesan cheese sprinkled on top.
