Johnny Appleseed was not a fictional character but a real person named John Chapman. His nickname came from his enterprise of introducing apple trees to several American states. He was, on more than one occassion, mentioned in magazines and newspapers of the day including Harpers Magazine.

Therefore, there is not one but many authors of his story with information gathered from a variety of sources. His story is also handed down verbally as folklore from generation to generation.
