Why would he?

First, the Italians (which were members of the Axis for a time,) wouldn't exactly want the Pope dead. Secondly, the Pope wasn't very influential in the world Hitler wanted. He risked infuriating Catholics around the world (and those sympathetic to the murder of important, and innocent men.) Hitler liked upsetting people without cause. Look at Operation Barbarossa. But the Pope would have been a pretty hard target to get, what with being surrounded by pissed off Italians. Also, it would have served little purpose to his cause.
