Because Moses is said to have lived in Egypt in around 1250BC 1200 years after the Giza pyramids were built and about 300 years after the last pyramid. The Bible account (Exodus 1 v.11-15) of Moses does not mention pyramids but cities. Cities built predominately out of mud brick.

Another option is that the whole event of the Israelites in Egypt did not take place. It is at best myth, a reference to a lesser event blown out of proportion by the passage of time. There are no references to it outside of the Bible.
