Airplanes are an efficient way of observing the battle field. When WW1 started, horses were used as recon and artillery spotters. Militaries quickly realized cavalry were obsolete because of the type of warfare they were facing - machine guns, barbed wire and trenches pretty much ended the usefullness of mounted troops. Airplanes filled the void.

A bonus was the fact cameras could be mounted on airplanes and take photographs of large sections of the Front. Much more useful when it comes to spotting the enemy's positions.
