Ernst Udet flew in both wars. Herman Goering was a pilot during WW1 and was involved politically in WW2.
Manfred von Richtofen, Germany's WW1 ace pilot was 26 years old when he died.
The Red Barren
An unknown pilot in WW1.
I've checked and rechecked my books on WW1 pilots and can find no Central power pilot who shot down 1 Japanese plane, let alone 40. Evidently during WW1 the Germans had only 1 airplane posted in Asia, so no pilot shot down 40 Japanese during the war.
The Red Baron, or Baron Von Richtofen, was the top pilot of Germany during WW1.
In WW1 pilots were called fly boys.
In the books I have read about Amelia, her main inspiration appears to be Frank Hawks, an ex WW1 pilot and barnstormer.

Yes, it is a very dangerous job. Your first miscalculation is usually your your last one.
Excellent flying and machine guns - that's about it. WW1 airplanes had no armour so if the pilot wasn't quick enough, they were out shot down.
Yes, it is dangerous to leave the pilot light out on a gas appliance as it can lead to a buildup of gas and potential fire or explosion hazards.
