Farmers lived by tilling, planting, cultivating, and harvesting. They took care of animals of all sorts. There were some innovations in the middle ages that made them far more productive than they had ever been before, and these included the horse collar and the heavy plow, which combined to double production.

Farmers were pretty poor during this time, however, and did not have much in the way of rights. They were not allowed to move off their lands and, by today's standards, seem rather like slaves. They had to give their lords a part of their production, but in return they were guaranteed the right to use the land and protection. One form of security was that they could not be evicted simply because the land was bought or sold, which was the good part of being unable to move.
