Make sure they are really fresh and not bruised. Keep them cool.
You can actually purchase a spray called "Pumpkin Fresh" that will keep the carved pumpkins fresh longer. Other home remedies include soaking the carved pumpkin in bleach for 8 hours before setting it out, rubbing the inside with Vaseline, or spraying it with an acrylic coating. The latter 2 remedies are not designed to kill mold spores, but to keep a barrier between the pumpkin's flesh and moisture.
