The rabbit is a well known symbol of fecundity, the ability to produce abundant offspring. Easter, especially in some of its pre-Christian origins, has a lot to do with life, fruitfulness and fecundity. It is a natural but for some less than obvious fit. The same ideas pertain to the concept of Easter egg.
