Probably because Wednesday and Friday were days of fasting in Christian tradition. While you can eat fish on those days, Christians traditionally could not eat meat, or feast. That would only leave Monday, Tuesday or Thursday.
Of note, Canadian Thanksgiving always falls on a Monday.
