In the UK a courgette is an immature marrow. Courgettes have not yet developed hardened seed casings and so the whole fruit can be eaten without the need for removing the seeds. Slice them width ways and pan fry until brown and soft. A simple recipe to accompany plain chicken and new potatoes; 2 cloves garlic are crushed and pan fried with 1 courgette sliced. 3 tomatoes peeled and sliced are added when the courgette is browned. A generous handful of chopped of parsley is added just before serving. Alternate:
In North America the courgette appears in its AKA version - the Zucchini. We've become adept at using up the zucchinis that appear on office desks from late summer on.
