The furnace kicks on when the temperature drops below the set temperature on the thermostat.

Always try simple first...thermostat is probably stuck open...cheap and easy replacement.
If your engine thermostat sticks open it will run cooler on your temperature gauge and you won't see the temperature gauge go up to the point where your engine thermostat opens and then the temperature gauge will show a drop in temperature , your check engine light will probably come on , your gas mileage will be less , the heat from your heater probably won't get as hot If the engine thermostat were to stick in the closed position your engine will overheat ( but there are several other causes for an engine to overheat )
Do you mean what temperature do you set it at? Comfort level is normally between 66 and 72 degrees. If you set your thermostat back when gone or at night dont drop it any more than about 6 degrees to maintain any energy savings your trying to get.
It sounds like the thermostat is opening up late causing the engine to almost overheat before it opens. Replace the thermostat.
The old thermostat will simply lift out. Drop in the new thermostat. Put a new gasket on the thermostat housing. Secure the thermostat housing with the retaining bolts.
I would suspect a slow reacting thermostat, or one that is not correct for your vehicle. The thermostat opens and closes to allow the hot coolant from the engine exchange with the cooler fluid in the radiator. When the thermostat sticks or reacts too slowly the temperature of the engine will rise above normal, then drop suddenly as the thermostat opens, then the temperature may dip farther down than normal as too much colder fluid is exchanged than is needed to maintain operating temp.
Remove the water supply hose from your Chevy Equinox thermostat housing. Remove the thermostat housing retaining bolts. Lift the old thermostat out and drop in the new thermostat.
