Prince William's title is His Royal Highness Prince William of Wales. Many are assuming Kate Middleton's title will be Princess Catherine of Wales. However, the Queen may bestow any title she wishes, so we will have to wait for the announcement from her to know for sure.
That all being said, Kate Middleton is marrying into the House of Windsor, so if she did want to use a last name it would be Windsor.
