Where I work we carry out locust dissections. The best way is to put them in the freezer overnight! The cold causes their enzymes to stop functioning, essentially shutting down respiration.
We've tried gassing them with CO2, but it requires lots of gas over quite a long time to make sure they're completely dead - and sometimes even then their bodies twitch for ages afterwards.
The only movement you tend to get with frozen locusts is the extension of their legs as the joints in them thaw.
