I turn my face in another direction and start walking slowly away. If the bee comes around I turn away each time. If the bee gets in my face, its usually just a carpenter bee, which likes to act aggressive when you're near its territory, but doesn't sting.
You're right not to ever swat at them. That is just about the stupidest thing to do IMHO.

If it's fruitflies, check for rotting food ;-) If its flies that are attracted by spoiled meat, look for a dead animal, a.s.o. Before you use insecticides, try flypaper.
No, that sounds like superstition. To keep flies away use gauze in front of your windows, or close the windows, and don't keep fruit around for too long outside the fridge. Flies do not react to pennies in any way, especially not in ziplock bags :P

This is not really a behavior strongly associated with flies specifically, but lots of flying insects do seem to be attracted to artificial lights. The general theory is that it confuses them.
