A staple of the Union fighting man's diet was hardtack. This cracker was so hard that often times in order to eat it they would dip it in coffee to soften. This additional step gave them an another advantage - at a time when improper storage conditions meant that their food would be infested with insects, soaking in coffee allowed the maggots to float to the top where they could just skim it off the top. As a result the soldiers referred to their hardtack as worm castles.
