Crayfish are scavengers because they primarily feed on decaying organic matter, which provides them with essential nutrients. Their diet includes dead plants, decomposing animals, and detritus found on the river or lake floor. This scavenging behavior helps recycle nutrients back into the ecosystem, promoting overall environmental health. Additionally, their adaptable feeding habits allow them to thrive in various habitats.
Crayfish are scavengers and will consume nearly anything is can grip. Sinking Shrimp pellets work well.
Some of the scavengers that live in the swamp are an opossum, crayfish, copperhead snake, box turtle, and a blue jay (bird) there are way more then what I listed though.

http://en.wikipedia.org/wiki/Crayfish At night, some fish become less energetic and settle to the bottom. The crayfish might see this as a chance for an easy meal, or a threat, and injure or kill the fish with its claws. Crayfish are effective scavengers and will consume fish carcasses. They sometimes will consume an exoskeleton after it is molted.
Without much more information the question can not be answered accurately. Crayfish are scavengers and guppies are not their natural prey. If the crayfish is small enough and your guppies don't have long flowing fins then the guppies may well be too fast for the crayfish to catch. So the answer then would be none. Are you feeding the crays dead guppies? If so I would add one and see how long it takes the crayfish to eat it. Then I would add more and more dead guppies one at a time as the crayfish devours them. As the crayfish grows so it will eat more.
hermits crabs are one of the most common scavengers in the ocean.
Fresh water crayfish feed upon carrion, small fish and water insects, but the majority of their food is algae and water-type plants. They also filter feed. Saltwater crayfish are also filter feeders, but scavengers too and often feed upon fish carcasses and regularly prey upon urchins.
