First of all, don't lie. That is one important rule to remember for any interview question.
One way to answer this question is to say a weakness that could also be a strength such as "I feel like I'm really nit-picky about everything. I seem to waste so much time organizing my work space to my liking. However, I notice this does save me time when looking for things and I like the feel of a organized work place." You don't want to say something silly like "I work too much" because that will make you arrogant. So make sure the turning-your-weakness-into-a-strength is reasonable and doesn't make you seem arrogant.
Another tactic is to plain old tell the truth and tell the interviewer an anecdotal story of how you have been trying to combat this weakness. Try to convince the interviewer that you weakness is going to diminish with time.
