According to the US Department of the Interior, they are simply called hunter's attendants. You see this term used a good deal in their hunting documents. One example is as follows:

Eligible Hunters & Attendants: Both youth and hunters with disabilities must be accompanied by an adult (18 yrs minimum) attendant that is capable of tracking and retrieving deer. Attendants for youth are not allowed to hunt. Attendants for hunters with disabilities are allowed to hunt, must be able-bodied, and cannot be P-2a certified.
