They need to know the menu. They need to understand about special diets (gluten free, dairy free, etc.) to help patrons make menu choices. A waiter needs to have a good knowledge of all the daily specials. They need to know the bar and what drinks they have. They must have excellent manners, a great deal of patience and know the proper ways of serving and clearing tables.
