Depending on the store manager's mood that day, you could just get your hand slapped or if he/she's in a bad mood, they can elect to charge you with theft and file a police report. I believe the value of the goods would have some impact on the seriousness of the charge.

Probably better to pay for it or if you don't have the money .. walk away until you do.
