Straight-ticket voting is voting for one party for the whole ballot. Split-ticket voting is voting for candidates of various parties for the various offices on the ballot.

Some (perhaps all?) states will give you the option of selecting a straight-ticket vote at the top of the ballot so, if everyone you are voting for is of the same party, you do not need to go through the entire ballot (of course, this does not apply to primary elections).
