There are some differences of opinions on this question but the most poplular answer seems to be that Bundy used the 3rd person speech habit to distance himself from the crimes he committed. Instead of using the personal "I killed", or "I raped" when speaking of himself he would say "you kill" or "you rape".

When FBI interviewed Bundy for his help with the Green River Killer of the 1980's he explained that "he would go back to the dump site" or "he would have sex with the dead body". Just another tactic to put himself center-stage again.
