A couple of reasons. One, because during a crime, while their heart is pumping with nervousness, they may retain false thoughts about the situation, like it is justified to kill a man if he was in your way, or robbing a store is OK if your family is in a monetary pickle. The latter may even be understandable, but certainly does not leave the perpetrator innocent. Another reason may simply be because the criminal puts on an innocent face and states flat out lies about the situation in order to be released or have the least amount of jail time possible.
